I would love to take credit for this delicious dish but I cannot! My health conscious bestie created this concoction and I must share it with you! To be honest, if anyone other than her would have tried to get me to eat it, I would have said no way! It looked a little strange…but oh my gosh when I tried it….ahhhhhmazing!! This is a great alternative to regular tacos. There are a staple at our house as they are one of the few foods all of my kids will eat…so now I just do this for mine! (Affiliate link below.)
Ingredients:
- Ground beef, turkey, deer…whatever suits your fancy
- Yellow, Orange, Red and/or Green Peppers
- Taco Seasoning
- Black Bean & Corn Salsa (so far Aldis is the place to get this)
Brown your meat. I drain and then rinse the meat to get all the excess grease off it. While the meat is browning…I slice the peppers and sauté them in water for a few minutes. (Also, if you don’t have this hamburger chopper, do yourself a favor and order one RIGHT NOW! You will never want to brown meat without it!)The Pampered Chef Mix N Chop 2583
That is all the cooking required here. For the base of your bowl, put in several pepper slices. Cover with taco meat and then put a healthy serving of the black bean and corn salsa on top. You can add some guacamole or avocado if you like too. This is so good that I don’t even miss the shells or cheese at all!! Taco night stays easy and I get to count it as healthy….win/win!
